Carrot Cake
 


IN A MED SIZE BOWL,
Place 1 ½ cups whole wheat flour
1 cup sugar
2 tsp. Baking pwd.
1 tsp. soda
½ tsp salt
2 tsp. allspice or pumpkin spice
½ tsp mace( if you have it)
stir in 3 eggs and ½ cup milk
start slowly and cream at fairly high speed(#6)
for 5 minutes
Stir in ½ cup oil &1/2 cup milk mix slowly until smooth.
Add ½ cup pecans
¼ cup raisins
1 cup graded carrots

set oven at 360*
measure into 2-8" pans well greased
and bake aprox 35 minutes.
Check to see there are no wet spots on top.
This cake is firm not light

Frosting
(small) cream cheese ( softened)
½ cup shortening (soft)
1 box pwd sugar and cream well add a bit of water if to stiff
add ¼ cup cocoanut
¼ cup pecans or chopped walnuts
¼ cup raisins
stir together with spoon.
