Coconut Custard Pie
 

We have made this in class and it always turns out great. Give it a try.

In a med. size bowl, place 3 eggs.
1 tbsp. flour(any)
1/4 cup sugar
dash of salt
shake of pepper (Important for flavor)
1/8 tsp Mace ( optional)

With a hand mixer cream at med speed for 2 1/2 minutes.
Now add 2 1/2 cups cold milk and stir in well.

in a large pie shell place 1/2 cup coconut and mix in filling, then place in center of pre- heated oven @ 350* and ladle in the balance of the filling to the top. this will make 19" shell or two smaller shell

BAKING IS TRICKY. This pie should bake about an hour to golden brown if not leave in longer, if to dark your oven is to hot the pie center should be like firm jell-o. the center may fall a bit not to worry it will be fine .
Remember this pie is to be served cold, do not try to cut it hot

but it's not that hard give it a try.

Here is a treat for you. Have you ever wondered how they made that great Bread puddin you remember?, Well here it is!

In a fairly large deep pan, place broken up stale bread as much as you like and put the above filling in it, making sure all the bread is soaked and should be deep enought, in other words, it is better to a smaller pan yet deeper then a large shallow one.

Bake @ 375* for about 1 hour until solid GOOD EATING!!
