Wash and soak chicken in buttermilk for and hour or longer (over night)
Remove the chicken a piece at a time and dredge in flour mixture and fry in 2" of oil for 10 minutes on one side and 15 on the other.
Do not have oil over 360* so it browns slowly and cooks through.
Flour mixture 1 ½ cup flour 2 tsp salt 1 tsp. Pepper.
