(Stage 1) in a measuring cup place 8 oz of egg whites*
(No yoke at all)
In a medium size bowl measure 2 tbsp sugar
1 teaspoon. cream of tartar
A pinch of salt,
Mix together then add egg whites and whip at high speed until firm peak forms (30- 50 seconds)
In a small dish pre- measure
1/2 cup sugar
3/4 cup of flour AP, mix together,
To the whites add1tsp vanilla add too above, by hand or spoon, do not use mixer!
Pour into clean dry tube pan or deep baking dish. (Do not grease) Bake @ 360* for 40 minutes aprox. Good luck.
Bakers secret as soon as the cake comes out of the oven, invert while hot and let it cool. Sprinkle with sugar to keep it from sticking to plate
After it cools to remove from pan push down all around with the fingers to break seal and pull out of pan. It does not dump like a layer cake you must pull it out leaving a brown crumb in the pan.
The cake must be kept covered, with plastic or in a cake-covered dish. And can be frosted with a light frosting.
