Salt Rising Bread #2
 

Corn Meal 3 oz.
Baking soda 1/4 oz
Hot milk 1 lb. heated to boiling
Okay to reconstuit pwd. Milk
Pinch of yeast not much as a starter
Bread flour 4 lbs.
Water 4 lbs.
Mix well then set aside covered to ferment 12 to 18 hrs even 24

Put sponge in mixing bowl add,
Salt 3 oz..
Sugar 3 oz
Shortening 3 ozs
Water 1 lb.
Flour 4 lbs.
Dough should be firm not stiff
Scale and proof ,bake out well.
