Bagels
 

First bring to a boil a large pot of water w/2 tbsp salt this will take time to come to boil do mixing and make up while waiting.

8 oz. (1cup) warm water
1 Tbsp sugar
Stir in 1 cup Bread flour
Add 2 heaping Tbsp dry yeast
2 heaping tbsp shortening
Stir and add 1 1/2 cup bread flour
1 tsp salt *Special not do not add salt with yeast

Mix with spoon until stiff and turn out on the table and start kneading yes it is tough but work as long as you can cover and rest then do more. We need to knead for 40 times rolling and folding. Rest.

After 15 minutes roll it out and cut into 5 equal peaces

To shape bagel roll out long about a foot circle and over lap ends aprox. 1 inch now you have a circle of dough.*note you must seal the ends or they will open when boiled .

After doing make up cover w/ wrap and rest for a few minutes. On the counter. While waiting put corn meal into a plate beside the pot.

With a spatula lift one at a time and put into the boiling water boil 30 second turn over and do another 30 seconds, you should be able to boil 3 at a time or more. as you remove them from the water, place them on the corn meal then place on baking pan when finished pop into a hot oven set @410*they will take about 15 minutes to bake when there brown there done.
